Students in this course will identify the fundamental aspects of modern marketing and the steps of the new product development process, analyze marketing data that guides the strategic planning process, and create a promotional plan for a hospitality product or service. Students will also define an effective product-specific advertising campaign and evaluate the components of a social media strategy. A biblical framework will be used throughout the course.
Students in this course will demonstrate the ability to pass the federal service sanitation requirements examination, determine the food service safety certification requirements for their municipalities, and evaluate the impact of government regulations on the hospitality industry. Students will assess franchising as an entrance path into business ownership and analyze the impact of increased labor costs and other current trends and issues on the industry. A leadership perspective consistent with a biblical worldview will be developed in the course.
Students in this course will demonstrate the ability to analyze a dataset using quantitative tools and communicate the results. Students will interpret financial statements, evaluate cost accounting systems used to make informed business decisions, and evaluate the impact of monetary and fiscal policy upon the industry. Students will integrate biblical principles into data-driven business decision making.
Students in this course will differentiate between and identify key issues within each segment of the hospitality industry. Students will analyze environmental components that impact each segment, creating a profile and career path of specific jobs, including an individual professional development plan consistent with identified career path and job segments. Students will develop a leadership perspective consistent with a biblical worldview.
Students will evaluate the legal and competitive implications of policies and procedures that deal with customers, labor, and union stakeholders within the hospitality industry. Students will analyze the impact of service area demographics on operational capability and determine key human asset issues affecting a business plan. Students will develop a biblically consistent approach to strategic human asset management and conflict resolution within the hospitality industry.
Students in this course will apply quantitative tools to decision making in financial, economic, and business markets. Students will integrate time value of money and risk/return considerations into hospitality industry decision-making and capital budgeting. Students will also plan business activity that integrates managerial accounting, finance, and economic concepts into tactical and strategic decisions used for business applications. Students will utilize quantitative analysis tools from a biblical perspective. Pre-requisite: HSM-420
Students in this course will develop effective marketing strategies, identify current trends and issues, and differentiate specific characteristics of the segments of the hospitality industry. Students will also create a quantitative tool-kit for improved decision-making and determine optimal human asset practices while creating a business plan for a small hospitality industry business. Students will develop a leadership perspective consistent with a biblical worldview. Students will be required to perform a field exercise as part of this course. Pre-requisite: All required courses in the major must be completed before starting the capstone HSM-490
